# Does Honey Go Bad? Shelf Life, Crystallization, and Storage

There is a jar at the back of most kitchen cupboards that has gone solid, sits two years past the date printed on it, and prompts the same hesitation every time somebody finds it. Is it still good? Why did it go hard? And is the hard part a sign that something went wrong?

The short answers are reassuring. Properly stored honey does not spoil, crystallization is not spoilage, and the jar is almost certainly fine.

The longer answers are more interesting, and they come with a few genuine caveats that get left out of the usual “honey lasts forever” line.

Does honey go bad?

Pure honey, kept sealed and dry, does not spoil. This is chemistry rather than folklore, and four properties do the work together.

The first is water content. Honey holds only about 17 to 20 percent water, well below the level microorganisms need to grow.

The second is acidity. Honey sits at a pH of roughly 3.2 to 4.5, acidic enough to inhibit most bacteria.

The third is hydrogen peroxide, which honey produces continuously at low levels. It is the same compound sold in brown bottles for cleaning cuts, present here in trace amounts.

The fourth is osmosis, and it is the most ruthless of the group. Honey is so concentrated in sugar that it draws water straight out of any bacterial cell that lands in it. The cell dehydrates and dies before it can reproduce.

The elegant part is how two of those defenses arrive. As bees process nectar they add an enzyme called glucose oxidase, which acts on glucose and produces two things at once: gluconic acid, which drives the pH down, and hydrogen peroxide. The caveats to never spoils

The never-spoils line gets repeated without its conditions, and the conditions matter.

Honey ferments if there is too much water in it. This is precisely why beekeepers test moisture before harvesting rather than trusting the look of a frame, as our honey harvesting guide covers. Honey above roughly 18.6 percent moisture can ferment in the jar no matter how carefully you store it, because the problem was already there when it was bottled.

Honey is also hygroscopic, meaning it actively pulls moisture out of the surrounding air. A jar left open, or one with a lid that no longer seals, can slowly take on enough water to become fermentable.

And a wet spoon puts water and contamination into the jar in a single motion, which is the most common way a jar of honey gets ruined at home.

So the storage rule is short: sealed and dry.

What the best before date actually means

The date printed on a honey jar is a packaging and quality convention rather than a safety cutoff. Most jurisdictions require a date on packaged food regardless of whether that food is capable of spoiling, so honey gets one along with everything else.

Honey well past its date is generally fine if it has been sealed and stored dry. What does change slowly over years is character rather than safety: aroma fades, delicate floral notes flatten out, and the color often darkens. Judge the jar rather than the label.

Why does honey crystallize?

Honey is a supersaturated sugar solution, which means it holds more dissolved sugar than the water in it can really keep dissolved. That state is unstable over time, and some of the sugar eventually comes out of solution as crystals.

Specifically it is the glucose that comes out. Glucose is considerably less soluble in water than fructose, so it is the first to give up and form crystals, while fructose is happy to stay dissolved.

That single fact explains why different honeys behave so differently. Varieties high in glucose, such as clover and canola, can crystallize within weeks. Varieties high in fructose, such as acacia and tupelo, may stay liquid for a year or more.

Temperature is the other lever. Crystallization happens fastest at roughly 50 to 60 degrees Fahrenheit, around 10 to 15 Celsius, and slows down considerably above about 77 degrees. Keep that range in mind, because it becomes very relevant to where you store the jar.

Crystallized honey is not spoiled

This deserves saying on its own, because it is the misconception that sends perfectly good honey into the bin.

Crystallization is a physical change in how the sugar is arranged. Nothing has degraded, nothing has grown, and the honey is exactly as edible as the day it was bottled. Plenty of people prefer it that way and buy creamed honey, which is simply crystallization controlled deliberately to give a fine, spreadable texture.

There is even a useful signal in it. Heavily processed and ultra-filtered honey often stays liquid far longer, because the pollen grains and fine particles that give crystals something to form around have been stripped out. A jar that crystallizes readily is frequently a sign you bought raw honey rather than evidence that anything is wrong with it.

How to decrystallize honey properly

Stand the jar in a bath of warm water and let it come back slowly, stirring now and then as it loosens. That is the entire method, and the only real skill is patience.

The number that matters is 104 degrees Fahrenheit, about 40 Celsius. Above that, honey’s enzymes and its antibacterial properties begin to degrade, so you want water that feels warm rather than hot. Take an hour over it rather than ten minutes.

The mistake to avoid is the microwave. Microwaves heat unevenly and are difficult to control, so you end up cooking part of the honey while another part is still a solid block, and the parts you overheated lose exactly the qualities that made raw honey worth buying. It is quick, and it costs you the thing you were trying to keep.

How to store honey

Keep it sealed, at normal room temperature, somewhere dry. That covers almost everything.

The one piece of advice that surprises people is this: do not refrigerate honey. A domestic fridge runs at roughly 37 to 40 degrees, and on the way there the honey passes straight through the 50 to 60 degree band where crystallization is fastest. Refrigerating honey is one of the most reliable ways to make it go solid, which is the opposite of what most people are trying to achieve.

Freezing, oddly enough, is fine. At freezer temperatures crystallization effectively stops, so a frozen jar keeps its liquid texture and thaws out much as it went in. For a beekeeper sitting on a large harvest, freezing is a genuinely good long-term option.

Honey and babies under one year

One genuine safety exception is worth stating plainly.

Honey can carry spores of a bacterium called Clostridium botulinum. In an adult these pass through without incident, but in a baby under 12 months the gut is not yet mature enough to stop them germinating, and they can produce a toxin that causes infant botulism. It is rare, and it is serious.

Both the Centers for Disease Control and Prevention and the American Academy of Pediatrics advise giving no honey in any form before a child’s first birthday, and that includes honey baked or cooked into food, since the spores survive normal cooking temperatures.

After the first birthday, a child’s digestive system handles these spores without difficulty and honey is no longer a concern.
