Types of honey means several different things at once, which is why the shelf is confusing. One jar might be clover honey, light amber in color, raw, and certified organic, and every one of those words describes a different thing about it. Monofloral and polyfloral honey

The first and biggest division is how many flowers went into the jar.

Polyfloral honey, almost always sold as wildflower honey, comes from whatever happened to be blooming while the bees were working. It varies from region to region and season to season, so no two batches are quite alike. It is cheaper and more common than monofloral honey, and it is not a lesser product, just a less specific one. Many people prefer the complexity of a good wildflower honey to any single variety.

One honest caveat: no honey is ever purely one flower. Bees forage where they please over several square miles, so monofloral simply means predominantly, not exclusively.

The general rule holds up well: lighter honeys taste mild and read as sweeter, while darker honeys taste bolder and more complex, with the bitterness and mineral notes balancing the sweetness out. A light acacia suits fresh fruit and delicate tea, while a dark buckwheat can stand up to strong cheese or go into gingerbread.

Manuka deserves a word of its own, since it is the one people ask about. It is a premium monofloral from New Zealand, dark and thick with a medicinal, mineral taste, and it is graded by a UMF or MGO number that measures its methylglyoxal content. That compound gives manuka an antibacterial property that is well established in laboratory testing. The specific health claims that follow it around, though, are debated, and they are a question for a doctor rather than a honey guide. What is not in doubt is that manuka is genuinely distinctive and priced accordingly.

What honey color tells you

Color is the honey feature people notice first, and it is more informative than it looks.

The USDA grades honey color on the Pfund scale, which runs from water white through extra white, white, extra light amber, light amber, amber, and finally dark amber, measured as a distance in millimeters along a standard amber wedge. It is a purely visual scale, but it correlates with more than appearance.

Raw honey has not been heated above hive temperature, which is roughly 95 degrees Fahrenheit. It keeps its pollen, its enzymes, and its full flavor, and it will crystallize over time, which is normal.

Filtered honey has been strained to remove wax and debris, which is fine and ordinary. Ultra-filtered honey has gone much further, forced through fine filters under pressure to remove even the pollen, and this is the one to understand: more than 75 percent of grocery honey in the United States is ultra-filtered. What organic honey actually means

Organic is the honey label people trust most, and it certifies less than most people assume.

USDA Organic certification covers how the bees are managed and what they are exposed to: no synthetic treatments, organic forage where it can be assured, and so on. It says nothing about how the honey is processed afterward. A honey can be certified organic and still be pasteurized and ultra-filtered into the same clear, pollen-free product as any other jar.

To its credit, USDA Organic is the only honey claim with real federal enforcement behind it, which makes it more meaningful than unregulated words like pure or natural. But only about 5 percent of honey sold in the United States carries the seal, and the reason is instructive. Bees forage over several square miles that no beekeeper can fence off or control, so proving a colony only ever visited organic forage is extraordinarily difficult. Treat organic as one useful signal among several rather than as the whole answer.

The fake honey problem

The tasting guides tend to stop before this part. Honey is one of the three most adulterated foods on earth, alongside wine and olive oil.

The reason is simple economics. Real honey is expensive to produce, and cheap syrups made from cane, corn, rice, or sugar beet look and pour much like it once blended in. Diluting honey with those syrups is profitable and genuinely hard to detect by eye or taste.

The scale is not small. The FDA tested imported honey across 2021 and 2022 and found around 10 percent of samples adulterated. It is ordinary honey whose crystallization has been deliberately controlled to produce a fine, smooth, spreadable texture instead of a coarse or gritty one.
