# How to Harvest Honey: When It Is Ready and How to Get It Out

The harvest is the part everything else points at. It is also the point where two mistakes get made, and both of them are avoidable.

The first is taking honey before it is ripe, which gives you jars that ferment on the shelf a few weeks later. The second is taking too much, which gives you a colony that starves in February. Neither is obvious at the time, because uncured honey looks exactly like finished honey and a heavy hive in August can still be a light hive by January.

When is honey actually ready?

There are three checks, and they get progressively more reliable.

The first is capping. Look at the frame and estimate how much of it the bees have sealed over with wax. The working rule is that a frame should be at least 80 percent capped before you consider taking it. The reason capping matters is that bees only seal a cell once they have evaporated the nectar down to roughly 18 percent water, so the caps are the colony’s own signal that the job is done.

The second is the shake test. Hold a frame horizontally over the open hive and give it a sharp shake. If honey rains out of the uncapped cells, it is still too wet to take. This is a useful first pass but not a verdict.

The third is the one that actually settles it. A honey refractometer measures moisture content directly, and you want a reading below 18.6 percent, with 16 to 18 percent being ideal for shelf life. It costs a modest amount and removes all the guesswork from the most consequential decision of the season.

That last point deserves emphasis, because most guides skip it. Capped frames are not automatically dry enough. In a humid climate bees will cap honey that is still sitting above 18 percent, and it will ferment in the jar regardless of how perfect the frame looked. Verify rather than trusting the caps.

The 18.6 percent figure is not arbitrary either. Above it, honey ferments, and in the United States it technically cannot be sold as honey at all.

How much to leave the bees

This decision comes before any decision about what you take.

The honey in the brood boxes is not surplus. It is the colony’s winter food, the thing they spent the entire season building, and how much they need depends heavily on where you live. A colony in a mild southern winter may need 30 to 40 pounds, while one facing a hard northern winter can need 90 to 100. Take the surplus above that and nothing more. If a colony is light, the correct harvest is zero, and that is a normal outcome rather than a failure.

Getting the bees off the frames

Before you can take a super anywhere, you have to separate several thousand bees from it. There are four common ways, and they trade speed against disturbance.

A bee escape board is fitted under the super a day before you harvest and acts as a one-way door, letting bees down into the brood box and not back up. It is the gentlest method and needs a second trip.

A bee brush is the simplest tool, and you sweep bees off frame by frame. It works, it costs almost nothing, and it thoroughly annoys the colony.

A fume board is a lid treated with a repellent that drives bees downward within minutes. It is fast, and it needs reasonable weather and a light hand with the chemical.

A blower simply blows bees off the frames with air. It is the fastest option and the roughest.

Whichever you use, work briskly and keep harvested supers covered. Open honey in the open air is an invitation, and a robbing frenzy is a genuinely unpleasant way to end a harvest day.

Uncapping the frames

Now the wax seals have to come off so the honey can escape.

A heated uncapping knife slices the caps away in sheets and is the fastest approach. An uncapping scratcher or fork picks out the cells that sit below the surface and the knife missed, and on its own it is the cheapest way to start. A roller pierces the caps rather than removing them, which some people prefer.

Work over a tub or an uncapping tank. This is comfortably the messiest step in beekeeping, and honey travels further than you expect. An uncapping knife pays for itself quickly if you have more than a few frames.

Do not throw away the cappings

The wax you just sliced off is worth keeping, and beginners routinely bin it.

Cappings are the cleanest and palest wax the hive produces. Unlike old brood comb, which darkens over years of use, cappings were built fresh that season for the single purpose of sealing honey. That makes them the best raw material you will get for anything you want to make from wax.

Extracting the honey

Two main routes, and which you use depends mostly on your equipment.

A centrifugal extractor spins the frames so honey flies out against the drum walls and drains to the bottom. The significant advantage is that the comb survives intact, which matters more than beginners realize: returning drawn comb to the hive saves the colony an enormous amount of work and honey next season. Straining, settling, and bottling

Fresh extracted honey is full of wax flecks, the occasional bee part, and a great many air bubbles.

Strain it first, through mesh or cloth, using a honey strainer sized to your setup. That takes out the solids.

Then let it stand. Honey poured straight into jars looks cloudy because extraction whips air into it, and the bubbles need time to rise. A day or two settling in a covered bucket lets the foam gather at the top where you can skim it off, and the honey you bottle underneath is clear. This single step is most of the difference between homemade-looking jars and professional-looking ones.

Bottle into clean, completely dry jars. Any water reintroduces the moisture problem you worked to avoid.
